Tomato Medley, Watermelon & Strawberry Salad


last week in mexico,  aside from avocado and guacamole, i lived off of tomatoes and watermelon.  they were delicious, refreshing, kept me hydrated {after dehydrating myself on mojitos} and now i'm missing them terribly.

so when i was planning our saturday BBQ i knew i had to find a way to incorporate them.


so combined with some strawberries a little balsamic dressing and tarragon i made a refreshing salad that not only tasted great but was pretty pleasing on the eyes as well.

 Tomato Medley, Watermelon & Strawberry Salad

ingredients:
1 pint grape tomatoes
5 orange cocktail tomatoes
5 strawberries, cut into quarters
1 1/2 cups cubed watermelon
1 tablespoon fresh tarragon, chopped
1/4 cup olive oil
1 tablespoon balsamic vinegar
juice from 1/2 lemon 
2 teaspoons sugar
sea salt & pepper to taste.

method:

cut half of the grape tomatoes in half, leaving the other ones whole.  quarter the yellow tomatoes.  place in large bowl with strawberries and tarragon.  set aside.
whisk together the oil, balsamic vinegar, juice from half a lemon, sugar, sea salt and pepper.
add dressing to tomato mixture tossing to coat.
place on a serving dish and top with watermelon.
serve immediately.

serves: 6-8
